Easy Weeknight Spicy Peanut Ramen
I absolutely love this new blog I found — Well Your World. It’s run by a down-to-earth, quirky husband and wife team, Dillon & Rebecca Holmes. And not only do they have recipes and YouTube videos, but also a community membership and even vegan products for sale! I am seriously considering joining their monthly membership, which also includes a couple live cook-with-us hangouts and Q+A.
I love that they are super casual cooks in the kitchen. Their emphasis is truly on helping you make delicious, healthy recipes in a time-efficient manner.
Recipe: Creamy Peanut Ramen
It’s a really simple recipe with basic ingredients that you likely already have on-hand (ginger, scallion, garlic). And then you can just throw in whatever vegetables you have on hand, although they do give vegetable suggestions in their recipe.
My Conclusion:
Loved these noodles! The sauce truly hits the spot (with the perfect amount of heat) with a great satisfying crunch!
My Tips:
Definitely 2x or even 3x the sauce recipe so you have enough for leftovers.
I added a lot more water to my Vitamix blender than the recipe called for. (I used 1/3 cup of peanut butter).
I would actually use my food processor next time, as the ingredients got super stuck in my blender it was a real pain in the butt.
I also added a bed of greens under the noodles — to get more crunch and green veggies in!
